This and That Wednesday

Today, we did all kinds of stuff around here!  Jeff worked in the hurricane force winds all day putting down more landscaping stones, laying more sod, and moving more dirt until he got called into work overtime tonight.  I cleaned house, changed sheets, filled Easter eggs, organized, and worked outside.  Hayden played with his trucks, tractors, and animals, read books, played outside, and was just simply, busy busy busy!

You know that song by Sugarland, “Stuck like Glue”?  That is Jeff and Hayden lately.  Hayden is glued to his Daddy’s side!  This morning, Hayden sat on the counter and snacked on a little apple while Jeff researched grub worms.

We have seen a few and did you know that grub worms turn into June Bugs?  This was new news for Jeff and I.  Learn something new everyday.  Maybe that is why we have so many of these nasty things around here.

Pretty sure he thinks they are his pet.  Y-U-C-K!  We tell him about 453 times a day not to pick them up.  Guess he is just curious!

Now that ya’ll are all grossed out, let me tell you about dinner!  Ha!

Aunt Robin came over and I made salmon patties for dinner tonight.  This is only about the third time I have ever made them.  Last time I made them I wasn’t too impressed.  I just couldn’t do it like my Momma!  But, I looked up a new recipe tonight, and they were so easy and soooo delicious!  If you like that kind of thing, you should give it a try!

SAMMY'S #1 SALMON PATTIES

1 can (14 3/4 oz.) salmon
1/2 med. onion, chopped
2 eggs
1 tsp. ground pepper
1 tsp. fresh lemon juice
1 whole pkg. saltine crackers, crushed

Empty 1 can salmon and juice into large mixing bowl (remove bones). Add 2 eggs. Add lemon juice. Stir mixture well. Add onion, pepper, crackers. Stir. Form into patties 3/4 to 1 inch thick. Set aside on plate or wax paper (make 5-6 patties). Let set 5 minutes. In large frying pan heat 1/2 inch cooking oil to med. high temperature. Do not skimp on oil. When oil is hot place patties in pan and cook 4-5 minutes per side. Make sure patties get cooked all way through. Center should not be cold. Patties will be beautifully brown, crunchy, and very delicious. Squeeze on some fresh lemon. mmmmm... they are to die for.

If you have not ever made salmon patties or even opened a can of salmon, don’t be alarmed by the bones!  Just pick the bones out the best you can.  If there are some left, it’s ok.  They just “dissolve”.  The first time I ever tried to do this, I ended up throwing the whole can of salmon away because I was so grossed out and didn’t know I was supposed to pick all the bones out.  It is sooo worth it!  These salmon patties were so good!  Try them!

June bugs...GROSS! I remember scooping one out of my brother's mouth when he was about 2! They make me cringe...but I loved looking at those sweet hands of Hayden's holding one.

Ok, FYI The bones in the salmon cans have been pressure cooked, and they actually are really good for you to eat, they are soft enough from being pressure cooked and they add good nutritional value to the salmon. Just saying...you don't have to de bone! I love me some salmon patties! We ARE country, for sure!

Not a fan of the bugs. Such a cute first picture of Hayden just hanging out. Love it.

Guess he is all boy with picking up those yucky bugs. :)

My little baby looks so cute sitting in the cabinet. LOl. Oh and by the way you can be like me (lazy) and buy the cans of skinless and boneless salmon.
