First Swim of the Year

This morning we started our day with Homemade Waffles.  YUM!  Our waffles have not ever tasted near as good (light and crispy) as the first time we made them.  We decided to add an extra egg white and turn up the heat on our waffle maker today and they were much better!  Glad we figured that out!  It’s the little things!  :-)

Then, we headed for “Malmart” (Walmart) in search of a Puddle Jumper for Hayden along with some sunscreen.  I was so excited to actually find the Puddle Jumper.  After using it today, I would definitely recommend it to anyone with a toddler!  Although Hayden’s face doesn’t really show it in this first picture (he was ready to swim), he never fussed with it on.  He seemed very comfortable.

After our Walmart trip, we headed over to Matt (Jeff’s brother) and Sherry’s house for a cookout, homemade ice cream and cobbler, and some fun in the sun!

He was a little unsure at first.  It was a little cold, but it didn’t take long until he was loving it!

Hayden did not have a nap all day and fell asleep on our way home about 6:00 PM.  Jeff brought him in with the intention of waking him up.

Well, Hayden was just not wanting to wake up.  Poor baby played HARD today!  He woke up while barely keeping his eyes open for a second to put on pj’s and then headed to bed.   I guess we will see what time he decides to wake up.  Hopefully it isn’t the middle of the night!

Biting and Baccalaureate

We had a great Sunday! So glad Jeff finally had a day off!   This morning was church.  I went to Sunday School and then to the nursery to do my bi-monthly “duty”.  I mean, it is a duty right?  They MAKE me go in that nursery and snuggle with those precious babies.  :-)  I don’t think either of the baby girls in there made a peep the whole time.  They were so content!  For some reason, I don’t remember a time when Hayden didn’t make a sound.  Ha!  We did have a new experience today.  When I went to pick up Hayden from his room after church, they lady in there showed me his arm and told me he had been bitten by another child.  YIKES!  It was quite red but I think I handled it pretty well. I have to admit, I am pretty glad that Jeff wasn’t there to pick him up.  If you know Jeff,  you know why.  :-)  I know things like this are inevitable but I still don’t want them to happen or more importantly for my child to learn to bite someone else. 

This afternoon, I was able to go to Robin’s Baccalaureate.  Just how do you pronounce that word anyway?   I got some pictures of before and after but we actually ended up sitting on the opposite side of where we thought Robin would be during the ceremony.  Maybe I can do better during graduation!

Cousins!  Robin and Morgan. They were both recognized as being honor graduates and graduating on the distinguished plan (taking a certain number of upper level and college classes).  So proud of BOTH of these girls!    (Carla, I stole your picture!)  :-)

Robin’s BFF Stephanie played her guitar and sang during the ceremony.  Two other senior girls also sang while another girl played the piano.  They all did so good!  I was so impressed!

I can’t believe graduation is just a few days away.  I did pretty good today, but I am pretty sure we will all be a mess on Graduation night.

Chicken Enchiladas and Butterfinger Cake

I love finding new recipes!  I searched Kellys Korner Blog yesterday looking for new recipes.  She recently did a couple of link-ups for people to post their favorite recipes.  You can look here for main dishes and here for desserts.  I gained weight just looking at some of the desserts!  YUM!    

Last night I made these Chicken Enchiladas that I found here.  I am not a fan of sour cream by itself, but these enchiladas were REALLY good! 

CHICKEN ENCHILADAS

3-4 chicken breasts, boiled and shredded (save broth)
2 cans of cream of chicken soup
1 can of chopped green chilies (drained)
1 8 oz. sour cream
1 pkg. flour or corn tortillas (I use corn; they are great!)
shredded cheese
1 can green enchilada sauce
Boil chicken, shred and mix together in large bowl with cream of chicken, green chilies, sour cream, and 1/2 can enchilada sauce. Bring chicken broth to boil. Place tortillas (1 at a time) in broth. Spoon chicken mixture on tortillas and roll. Place in casserole dish and cover with remaining chicken mixture and enchilada sauce. Sprinkle with shredded cheese. Bake at 350 degrees for 20 minutes or until done.  They were great as leftovers too!

I also made this Butterfinger cake that I found here.  I wouldn’t recommend making it.  You will probably want to eat the whole thing yourself and not share with anyone else.  Ha! 

Butterfinger Cake

Yellow cake mix
1 can sweetened condensed milk
1 jar caramel topping
3-4 Butterfinger candy bars
Cool Whip

Bake the cake mix according to the package. While hot - poke holes all over it. Mix together the sweet milk and caramel and pour over cake. Crush up the butterfingers and spread on top. Allow to cool and refrigerate. Once completely cool - top with cool whip.  *I ate it somewhat cool and then again cold.  It is better COLD if tasting better is really possible!  So YUMMY!!  :-)

A Sweet Treat from the DQ

This morning, Hayden and I met our friends at the park again!  What a beautiful day it was today!  I think I have mentioned it before, but there are two resident ducks at the park.  Today,they were particularly friendly and the kids loved it!  (I did not bring my camera today, so all the pictures are courtesy of the iPhone.)

After playing so hard at the park, we went to Dairy Queen with Amy, Hudson P., and baby Hayson.

I don’t know about you, I am so thankful for all the rain, but I am already tired of the storms!  With all the recent devastation, the storms have made me a nervous wreck!  It looks like we have some great weather ahead though! I hope you all have a great Memorial Day weekend.  We don’t have anything special planned.  Just gonna enjoy some family time and get geared up for a super busy week next week!

Morning at the Park!

This morning, Hayden and I met Mia, Landree, and Hudson at the park.  The weather was perfect and the kids had such a great time! 

These two stuck together pretty much the whole time!

Last time we went to the park, I had to go up and down the slide with Hayden.  Today, he was so brave!  He went up the first time and sat down ready to slide but got back up and came back down the stairs.  The second time, he decided to go for it and did it all on his own!

Then, it was a race between Hayden and Landree to see who could get back up the quickest!

We are so excited to be able to spend time with them!  I am pretty sure we will be getting in a lot of park/play time with Hudson and Landree over the next 10 days while Jen and Jeff Gray are gone with a college group from their church to Haiti for a Mission Trip. You can read more about their “mission” here and the creation of Alex’s house (that was in the works before the Earthquake).  If you have a few minutes, be sure to watch the videos!  (Especially the 2nd and 3rd one).   Have kleenex handy!  Really puts everything in our lives into prospective.  Those precious children MELT my HEART!   Please pray for them as they share God’s word and LOVE, provide leadership and worship,  and just pray for safe travel!!!

Robin’s last days of High School.

Yesterday was Robin’s last day in High School.  Mom, Hayden, and I joined her for lunch.  I guess any other day, it wouldn’t be real cool for us to do that.  But, I guess since it was her very last day of school, it was ok!  ;-)  I am so glad we did!

Hayden had cookies for lunch.  He didn’t want any pizza.  He thought the cookies the ladies at the bank gave him were much better.  Thanks Aunt Barbara!  :-)

Tonight was Prom Night!  Robin had a small catastrophe with her hair but all was well when she left!  I thought they looked GREAT!  I love that RED!!!

We asked Hayden if he wanted to take a picture with them.  He shook his head yes and sat down right in front of them!  So funny!

When they were about to leave, Hayden went to tell Robin bye.   When she was about to close her door, he ran back up there to her and said “Love You”.  Sweetest thing on earth!  He LOVES his Aunt Robin!
